– 1 cup Black Beans;

– 1/2 Red Onion diced

– 1 Red Pepper;

– 1 Yellow Pepper;

– Chopped Parsley to taste;

DRESSING:

– 1/4 cup extra Virgin Olive Oil;

– 4 tablespoons Apple Cider Vinegar;

– 2 tablespoons Dijon Mustard;

– Salt & Black Pepper to taste.
