- 1 cup Chick Peas;

- 1 cup Black Beans;

- 1/2 Red Onion diced

- 1 Red Pepper;

- 1 Yellow Pepper;

- Chopped Parsley to taste;

 

DRESSING:

 

- 1/4 cup extra Virgin Olive Oil;

- 4 tablespoons Apple Cider Vinegar;

- 2 tablespoons Dijon Mustard;

- Salt & Black Pepper to taste.
